Many of you know how much I love drinking tea, not to mention having afternoon tea. Here are some tea resources I’ve used over the years. (I’ll post another entry on tea rooms later on.) Now if I could just find a source of clotted cream produced in the United States. Yeah, good luck there.

Roasted corn and barley tea
When I’m at a Korean restaurant I try to get roasted corn (oksusu cha) or roasted barley (bori cha) tea. Both have a refreshing earthy flavor, without any caffeine. Even though it’s no longer summer over here, the teas are great chilled for the hot Californian days. My version combines both corn and barley. The […]
Reconstructing Salvadoran horchata
Allow me to offer you a break from the apricot oriented articles. 😉 I drank Salvadoran horchata for the first time a couple years ago, and I’ve been keen to figure out how to make it ever since. Unlike Mexican horchata, which is made primarily of rice, cinnamon and far too much sugar (at least […]
Green tea soy milk
This drink was inspired by Samovar’s soy matcha shake, which became my gateway soy milk drink. You could use any green tea powder. Matcha is the one used in the Japanese tea ceremony, and tends to be slightly bitter and earthy. Sencha or kabuse green tea powder, often sold in single serving packets as a […]
Tasting soy milks
I admit it, I find soy milk suspicious. Sure, it works nicely as a creamy substitute in soups; and the occasional soy cheese I’ve had at izakaya restaurants has been tasty. I’ve even had a couple soy-based ice cream sandwiches which nearly fooled me, taste and texture-wise. But soy milk. As a drink, especially a […]
Tea with mint & cardamom
I love tea, but am just not a fan of flavored tea, with its clashing fruity or cloying, perfumy permutations. There are, however, big exceptions: chai, and tea with mint and cardamom. The latter is quite refreshing, whether it’s served hot or cold. Excellent as an accompaniment for lunch or dinner, especially with Mediterranean or […]
Soda lemonade / limeade (soda chanh)
Several years ago during a blistering Summer, I had this drink at a Vietnamese restaurant. Soda chanh tuoi (a.k.a., soda chanh duong, or simply soda chanh), or soda lemonade as it’s often listed on menus, is usually made with limes, but it also tastes good with lemons. This drink is Most Revitalizing on hot days, […]
Variations on hot chocolate
Hot chocolate is great for dessert, or as comfort on a cold evening. One of my favorite chocolate drink experiences was at Ladurée in Paris: Just barely sweet and thick, slowly and happily relished. My opinion of hot chocolate mixes here in the United States has ranged from kinda interested to very disappointed. It can […]
Chai
For me, the best chai comes from a couple south Indian restaurants, Dasaprakash and Saravana Bhavan. (I’m usually disappointed by the Americanized café take on this drink: too bland or too cloying.) This recipe is certainly not perfect, but it’s a start. Use a full flavored, fermented black tea like Assam, Ceylon or English Breakfast. […]
Hot Apple Cider
Ingredients 1 gallon apple cider 2 cinnamon sticks, each about 2 inches long 8 cloves 8 whole allspice 1 lemon, sliced Method Pour the apple cider into a large enough pot. Put the spices into a tea caddy (eases straining), and place in the cider. Add the lemon slices, too. Heat the cider; it should […]
