Coconut Banana Pudding

The lime gives this pudding a nice, bright flavor.


  • 1 can (14 ounces) unsweetened light coconut milk
  • 3 ounces dark brown sugar
  • 2 tablespoons rice flour
  • 1/4 teaspoon sea salt
  • 3 ripe (but mostly firm) bananas, cut into 1/2 inch rounds
  • juice of 1/2 to 1 whole lime (depending on the size of the lime)


  1. Whisk the coconut milk, brown sugar, rice flour and salt in a sauce pan over medium high heat until smooth.
  2. Bring to a simmer, then cover for 10 minutes.
  3. Gently stir in the bananas, and simmer for an additional 10 minutes.
  4. Remove from heat, then stir in the lime juice. Serve warm.
