The lime gives this pudding a nice, bright flavor.
Ingredients
- 1 can (14 ounces) unsweetened light coconut milk
- 3 ounces dark brown sugar
- 2 tablespoons rice flour
- 1/4 teaspoon sea salt
- 3 ripe (but mostly firm) bananas, cut into 1/2 inch rounds
- juice of 1/2 to 1 whole lime (depending on the size of the lime)
Method
- Whisk the coconut milk, brown sugar, rice flour and salt in a sauce pan over medium high heat until smooth.
- Bring to a simmer, then cover for 10 minutes.
- Gently stir in the bananas, and simmer for an additional 10 minutes.
- Remove from heat, then stir in the lime juice. Serve warm.
